Ingredients
Difficulty: Intermediate
- 17g coffee, fine drip grind
- Pre-boiled water to the valve
- 3-cup moka pot
- Kitchen scale
- Stove and a folded towel
- Cold cloth to stop extraction
Method
- 1
Fill the base with just-boiled water up to the safety valve; starting hot avoids a scorched, metallic taste.
- 2
Fill the funnel basket with grounds and level it off without tamping, then assemble carefully with the towel.
- 3
Set on medium-low heat with the lid open. Watch for a steady honey-colored stream.
- 4
When it lightens and starts to sputter, pull it off and wrap the base in a cold cloth to stop extraction. Stir and pour.
